Suggest a better descriptionPreheat oven to 450 degrees. Rub potatoes with oil & bake until tender (about 1 hour). Cook bacon in skillet over medium-high heat until crispy. Transfer to paper towel to drain. Remove all but 3 Tbsp bacon grease from skillet. Cut shrimp in 1/3’s. Reheat bacon grease over medium-high heat. Add shrimp, Cajun seasoning & a pinch of salt. Cook until shrimp are opaque. Let potatoes cool to handle. Slice potatoes in 1/2 lengthwise & scoop flesh out into a bowl. Mash potato with 1 tsp salt, green onion, cheese, butter, sour cream, mayonnaise & pepper. Stuff potatoes with filling. Divide shrimp on top of potatoes & sprinkle with bacon. Return potatoes to oven & cook until heated through. Remove & sprinkle with scallions.
