A simple take on a Tampa/Cuban Classic
Sauté onion, bell pepper and garlic in olive oil till tender and starting to show color. Add tomato sauce and pepper and salt. Simmer about 20 minutes stirring frequently, very low heat. Add crab and simmer an additional 30 minutes. Let cool. Beat eggs with heavy cream together until smooth. Put Panko and some bread crumbs into one pie pan, bread crumbs only in another with a pinch of salt and paprika mixed in. When crab mixture is cool enough, use an ice cream scoop to but some in your hands, and shape it into a football squeezing out most of the liquid, so it will stay together. Place it in the bread crumbs and cover it thoroughly continuing to squeeze it. Place the “football “ into the egg wash and cover thoroughly. Then place in the Panko crumbs rolling around until fully covered. Place on foil covered sheet pan to refrigerate for at least 30 minutes. Set oven at 300. When ready fry in vegetable oil until desired golden brown remove from oil and place on another foil lined sheet pan. When all are ready and on pan, place in oven for 20 minutes.
