In 9x13 glass baking dish, combine 1/2 cup olive oil, 2 Tbs lemon juice and garlic. Add eggplant and marinate turning occasionally for 1-2 hours
Measure out 3 Tbs olive oil and brush bread on one side with it. Grill the bread until browned about 1 minute per side. Spread the oiled side of each bread slice with the Yogurt Boursin Spread.
Grill eggplant slices and the onion slices for 5 minutes or just until the edges begin to brown. Turn the eggplant and the onions over, top the eggplant with the cheese and grill about 6 minutes or until eggplant and the onion are tended and cheese is melted. Stack the onion slices on top of cheese and eggplant.
Arrange the the eggplant stacks on 6 bread slices and top with Red Pepper Sauce. Toss the baby greens with remaining olive oil and lemon juice and place on the Red Pepper Sauce. Top with remaining bread pressing bread slices together gently.
If no time to marinade , skip this step and brush with olive oil and lemon juice. If no grill available, do this on a stove top with a grill pan. The sauces can be made a day ahead.
