This is a old fashioned Southern chicken dish. enjoyed by generations. Server with some greens and buttery peas of broccoli.
1- Cut up the Chicken into pieces. Place on a bowl. Pour Buttermilk over chicken. Marinate for 2 hours.
2- On another bowl. Combine Flour, Parsley, Salt, Thyme Leaves, and Pepper.
3- Remove Chciken from Buttermilk
4- Pour Buttermilk from marinating Chicken in a shallow baking dish.
5- Roll pieces in Flour mixture.
6- Heat Shortning and Butter in a heavy skillet.
7- Brown Chicken pieces on all sides a few at a time, over medium to high heat.
8- Place Chicken pieces on top of Buttermilk in baking dish
9- Add Chicken brother to skillet. Scrape Brownings. Strain and pour around Chicken in baking dish.
10- Bake Chicken, uncovered at 375 degrees until crisp and tender, about 50 minutes.
Making the Buscuits
1- Mix Flour, Baking Power, and Baking Soda
2- Stir in Butter and Fat from the Chicken
3- Add Buttermink to make a stiff dough
4- Knead lightly.
5- Roll out on Floured board.
6- Cut into small rounds.
7- Bake 20 minutes until golden.
