Double smoked Ham with Maple Bourbon Glaze
Set up smoker or grill for indirect cooking and light the grill
Target temp range between 250-315 degrees F
Place Spiral Ham in disposable foil pan, bone side up
Liberally apply your favorite BBQ rub to the the ham
Let sit for 20-30 minutes then place into the smoker
Smoke ham until internal temp reaches 125 the apply the glaze
Pull ham from smoker at 135 internal temp and let rest: Temp should carry over to 140 degrees
Carve and serve
Potential Additions: Add fresh pineapple chunks or apples dusted with cinnamon to the pan for final 30-45 minutes of the cook. Serve with sliced ham.
Glaze prep:
Add bourbon, maple syrup, brown sugar and butter in a saucepan and cook on low-med until combined, reduced and thickened.
