Suggest a better description1. Set aside 1/3 of 1 pound pizza dough. Place remaining 2/3 piece on a lightly floured board and roll out dough as thin as possible.
Line inside of a lightly greased 8 X 8 inch baking pan with dough, allowing it to overlap sides by about 1/2 inch. Repeat process
with remaining 2 pounds of dough.
2. In large bowl, mix salami, sausage, Parmesan cheese, ham, 7 eggs and ricotta. Divide mixture evenly in the three pans and spread
to smooth tops.
3. Roll out the three remaining pieces of dough and stretch over each pan; pinch edged together with bottom layers of dough to
seal in the filling. In small bowl, beat the 2 remaining eggs and brush on top of each pie.
4. Bake in preheated 350 degree oven for 60 to 70 minutes or until golden. Brush the tops again with beaten egg after first 30
minutes. Cool pies in pans. Each pie makes 12 servings.
You can replace any of the meats with things like pepperoni or prosciutto. Dad uses 1 homemade pizza dough for 2 pies and we use the same amount of filling.
