Juicy, spicy Caribbean chicken - ideal for a barbecue
and delicious oven-baked, too. Serve with a large
mixed salad.
1 Blitz all the marinade ingredients with a good pinch of
sea salt and lots of ground black pepper in a food processor
to make a paste. Alternatively, grate the onion, crush the
garlic and finely chop the chilli before mixing with the
remaining ingredients. (Wash your hands well after
handling the chilli.) Place the marinade in a large bowl.
2 Carefully score the chicken through the thickest part
with a knife. Add the chicken to the marinade, stir well,
then cover and leave to marinate in the fridge for at
least 2 hours or overnight.
3 Preheat the oven to 200°C/fan 180°C/Gas 6. Line
a baking tray with foil.
4 Place the chicken on the prepared tray and brush
thickly with the marinade. Cook for 25 minutes, or
until lightly browned and cooked through.
5 Serve with lime wedges for squeezing over.
COOK'S TIP
* If cooking on the barbecue, sear the chicken on both
sides over a medium heat then move it to the edges of the
barbecue or up on to a higher level to finish cooking more
gently for about 25-30 minutes. Turn occasionally and
make sure the chicken is cooked through.
