Deconstructed Egg Rolls (meatless)

In a large skillet over medium-heat, saute the mushrooms, carrots and garlic in the olive oil for about 5 minutes or until the carrots are soft. Add soy sauce and seasonings, add cabbage and cook until the cabbage has wilted and is tender. Mix egg with a tablespoon of water and scramble in the mixture.
Cook rice noodles according to package directions, drain and add to the mushroom and cabbage mixture, tossing to combine. Season to taste. Server with a topping of the green onions.
