Dinner in a Hurry: Great Fall Harvest Dinner
1. Pop the frozen eggplant into the oven at 400 degree oven for about 10-12 minutes. Take it out and put your favorite spaghetti sauce on each slice with a spoon and mozzarella cheese on each too. Pop back in the oven till cheese melts and is bubbly. Serve with garlic toast and cottage cheese.enjoyum

Slice the eggplant into slices and fry in a skillet then freeze on a lined with foil cookie sheet till frozen then food save it and freeze them till you need them

This was one of those crazy nights when dinner was sort of an afterthought! So I pulled some fried eggplant out of the freezer and jar of sauce from the pantry and a bag of shredded Mozzarella from the fridge and made this wonderful, quick, easy and delicious eggplant parmigiana!
If you are going to be making eggplant like this anyway, make sure that you buy a couple extra to put in the freezer for nights like this. You can serve with a salad and garlic bread or a side of dressed pasta and you are good to go and your family won't know you had a crazy day and didn't plan anything for dinner.
If you have the right things on hand all the time, you can make quick, simple and delicious meals with very little effort that are delicious and nutritious. It takes a bit of planning ahead as well as an ability to cook on the fly, but in the end, everyone is fed and happy!
