Eggs Benedict
1. In a pot, bring 1" of water to a point where it's barely simmering. Make sure the metal bowl you're going to use won't touch the water when you place it on the pot.
2. In a metal bowl, whisk the egg yolks and lemon juice thoroughly until the mixture thickens and lightens in color.
3. Place the metal bowl on top of the pot barely simmering water, and whisk continually until the mixture thickens even more about 3 minutes.
4. Slowly add the melted butter, whisking the whole time.
5. Remove from heat and add seasoning (salt, cayenne, dijon).
6. Stack english muffin, ham, egg, sauce
7. add optional garnishes
