Turn oven to 180 degrees fan forced
Place lamb shoulder in roasting pan. Rub with cumin, oil, S&P, coriander and thyme. Roast 30 mins, drain fat.
Reduce oven to 140 degrees. Pour over the meat - the passata 1 jar, salsa, optional, fresh oregano, chopped rosemary, cardamon, add cinnamon sticks or powder S&P.
Cover with foil and add approx 2 cups of hot water to the pan to keep the meat moist. Bake 3 hours, 40 mins until lamb is falling off the bone. Shred the lamb.
(If you do not have salsa, use passata, paprika, chilli, garlic)
For nachos, serve meat in one dish, mashed avocado in a dish, sour cream in a dish , grated cheese,and CC'c in another bigger dish and serve with salad
For meat triangle, use small squares of puff pastry, swipe with tomato paste, put in chopped meat and a slice of cheese. Fold over and brush with milk. Make small slits in pastry for the steam to escape. Bake 15 mins at 200 degrees C
