Spread the refried beans on the tortillas, grate the cheese (optional), chop onion (optional)
Preheat oven to 425
Layer the tortillas with the enchilada sauce and cheese and onions in a casserole dish. If using cheese, reserve some at the end to top the dish.
With cheese: bake uncovered 45 minutes
Without cheese: cover with foil and bake 45 minutes
This is a fairly substantial casserole and freezes well.
