Spread vegetables and chicken onto baking sheet. Coat with olive oil. Evenly sprinkle with seasoning ingredients and combine.
Roast in oven, tossing halfway through cooking, for about 18-25 minutes or until chicken is cooked through and vegetables are tender.
Wrap tortillas tightly in foil and warm in oven during last 5 minutes of cooking.
