Sauteed chicken and spinach
Saute garlic and onion in olive oil for a minute or two, lightly salting the onion so it will not burn. Add chicken pieces and cook until no longer pink in the middle. Make sure to stir chicken to coat well with butter and garlic. Add Parmesan cheese and stir until chicken is well coated. Add spinach and cook until wilted. Serve over hot cooked pasta or spaghetti squash.
