heat frying pan over medium high heat, add cumin seeds and toast until aromatic. Remove and crush.
Beat eggs until frothy, whisk in cumin, turmeric and salt, followed by all the other ingredients bar the oil.
Put the oil in the same pan over medium heat and when hot put the egg ingredients, whisked, into the pan and coat the base. Cook until just set on top and beginning to turn golden underneath. Flip the omelette. Cook the other side until slightly golden. Serve with bread and sauces.
