This recipe is easy. delicious blend of orzo and feta.
Cook orzo in 6 to 8 quart pot of boiling salted water til tender. Drain well.
Toast pine nuts in saute pan over low heat til golden brown and fragrant
Whisk lemon juice, olive oil, salt and pepper in a bowl. Add hot orzo and toss to coat.
Fold in pine nuts, feta cheese and scallions. Season with salt and pepper.
