Prepare the fish:
In a small bowl, combine 2 tablespoons of the oil, 1 tablespoon lime juice, cumin, paprika, coriander, red pepper powder, garlic powder. Salt and Pepper to taste. Dip the fish into the bowl and turn the fish until it is evenly coated with the marinade. Place the fish onto a lined baking tray and let it marinate in the refrigerator for 15 minutes.
Make the lime crema:
In a small bowl, whisk together the sour cream, mayonnaise, lime juice, lime zest, and salt. Set aside.
Make the slaw:
In a large bowl, combine the cabbage, cilantro, green onion, and garlic. Set aside. Buying shredded slaw in a bag is very convenient.
Jalapeños: (Optional)
Heat the oil in a large pan over medium-high heat. When the oil is hot, toss in the jalapeño slices. Fry for a minute or two until they begin to soften. Remove from the pan and put aside, saving the rest of the oil and pepper bits to fry the fish.
Cook the fish:
In the pan used to cook the jalapeños over medium-high heat, toss in your filets. Cook until golden brown and flip, 3-5 minutes per side. The fish should be flaky when tested with a fork.
Heat the soft tortillas:
Skillet: Heat 1 at a time for a few seconds on each side. Stack them on a plate with a paper towel in between each.
Microwave: Stack them on a plate with a paper towel in between each. Microwave for 10-15 seconds at a time until tortillas are soft and steamy.
Assemble the tacos:
Break fish apart into chunks with a fork. Place on a tortilla, add slaw, crema, avocado, jalapeños, an extra squirt of lime juice, your favorite hot sauce, whatever your preference. Enjoy!
