Prepare pasta according to package directions.
Measure your portion of pasta after it's cooked.
Saute´ the bread crumbs in a pan sprayed with olive oil until golden brown.
These brown very quickly.
Set aside on a plate to cool.
One: Mix flour with a sprinkle of garlic powder and salt.
Two: Beat an egg white in a deep plate.
Three: Mix grated Parmesan to the cooled Panko and toss together.
Cut your chicken into evenly-sized strips about 1 1/2 inch thick.
Roll chicken pieces in flour mixture,
Dip them in egg mixture and let the excess egg drip off,
Roll them in bread crumb mixture,
pressing them into the mixture so they get covered in a lot of it.
Spray non-stick cookie sheet with some olive oil.
Place chicken fingers on cookie sheet.
Spray with olive oil and bake for 12-14 minutes.
You may want to broil for the last 5 minutes to get a nicer brown.
Your chicken should be white and have no pink inside.
Add additional time if needed.
While your chicken fingers are cooking, grate your zucchini into “zoodles".
Add garlic.
Saute´ in olive oil spray.
You can have as many zoodles as you want.
They're super low cal.
Heat some marinara sauce with some umami and basil.
Mix the zoodles with the noodles and top with heated marinara sauce
.
Immediately top with mozzarella cheese and then top with chicken.
This will melt the mozzarella.
Or broil briefly to melt cheese.
