2. Cut potatoes into fries and place in salted ice water. Let sit in fridge for 1 hour or overnight.
3. Preheat oven to 400 degrees on convection bake, with shelf on lower 3rd of oven.
4. Drain and rinse potatoes until water runs clear (3-4 rinses).
5. Dry potatoes and bowl. Toss potatoes in the bowl with oil and salt to taste.
6. Cover a baking sheet with parchment paper. Spread potatoes on baking sheet flat.
7. Bake for 20 minutes, toss/turn, and bake for 10-15 more minutes.
