1. Fry bacon until crisp
2. Add olive oil, onion, celery and cook until translucent
3. Add carrots and galic and cook for 1 min
4. Add canned tomatoes (including juice), chicken broth, lentils, thyme, bay leaves, lemon peel, salt & pepper
5. Bring to boil and simmer for 50mins
6. Discard bay leaves and lemon peel
7. Partially puree
8. Serve with parsley
