An easy prepare ahead breakfast
Step 1
Spray a 9 by 13-inch baking pan with cooking spray. Slice the baguette into 1/2-inch slices and arrange the slices in a single layer in the baking pan.
Step 2
Whisk together the eggs, milk and vanilla. Pour the egg mixture over the bread in the pan.
Step 3
In a medium bowl, toss peaches with the lemon juice and 1 tablespoon of the brown sugar. Scatter the peach slices evenly on top of the bread.
Step 4
Combine the remaining brown sugar and cinnamon and sprinkle over the top.
Step 5
Cover and refrigerate overnight.
Step 6
Preheat oven to 350 degrees. Uncover and bake for 40 minutes.
Be sure to use a crusty bread as it will be sitting overnight soaking up the egg mixture. Stale sliced sour dough bread works well too. Use frozen peaches ~ they will defrost overnight. Fresh and/or canned peaches will not work ~ they will turn brown and mushy.
