Butter sides and bottom of 10" spring form. Sprinkle with sugar and swirl pan to coat evenly.
Separate ladyfingers and line sides of pan with rounded sides against pan. Crumble remaining ladyfingers into bottom of pan.
Combine over hot water, chocolate morsels and water. Stir until melted and smooth. Transfer to a large bowl. Add egg yolks, one at a time beating well after each addition. Set aside.
In a small bowl, beat egg whites until stiff peaks form. Gradually add sugar and beat until stiff. Fold egg whites and whipped cream into chocolate mixture. Pour into pan and freeze until set. Meanwhile prepare chocolate layer (optional but beautiful)
Prepare white chocolate layer same as above, except use 6 oz. white chocolate baking morsels. Pour onto partially frozen chocolate cake and freeze for about 4 hours.
Serve with raspberry or cranberry sauce on the side
