Step 1
Preheat oven to 350 degrees. Add the sour cream and the soup to a 9"x13" baking pan. Stir until well mixed.
Step 2
Place the chicken breasts into the pan. I usually will filet the breasts first (cut lengthwise to make two thinner pieces of same size) to help cook faster. It also helps to nestle the chicken down into the mixture.
Step 3
Place the beef slices over the top of the chicken. You can even wrap the chicken with the beef if you want.
Step 4
Cover the pan with foil and bake for 40 minutes or until chicken reaches 175 degrees internal temperature.
Step 5
Uncover and sprinkle Parmesan cheese over the top. Cook 5 more minutes uncovered.
Step 6
Make the minute rice per box instructions. A good amount is 4 cups of rice, with 4 cups of water, plus 1/4 cup butter and about 1/4-1/2 teaspoon of salt. Bring the water, butter, and salt to a boil, then remove from heat, add the rice, and cover for 5 minutes. After that, fluff with a fork.
This goes great with the green bean casserole that is on the back of the French's fried onions pack. Also goes great with dinner rolls.
