Crunchy and delicious ginger cookies.
Mix the flour, bs, cinnamon, ginger and salt together. Cream together the butter and sugar in a bowl until pale and fluffy. Add the egg and syrup and mix well before adding the flour mixture. Mix enough just to form a soft dough. Roll the dough into marble sizes balls, roll each ball in a mixture of extra cinnamon and sugar until coated. Arrange the balls about 3cm apart on a greased sheet. Bake in a 175C preheated oven for 10-15 minutes.
On a normal sized tray it usually fits 4 biscuits across and 3 down making 12 on one tray at a time.
