In large bowl, whisk together pancake mix, egg, and oil. Whisk the water in slowly until the batter is a little thicker than pancake batter and scoops easily.
Pour 2 cups oil into skillet and heat on high. Oil is ready when it sizzles forcefully on contact with batter. Adjust the temperature as neccesssary.
Drop dough into the pan by the tablespoon. Cook 1-2 minutes, and then rotate with tongs. Cook until all sides are golden brown. Remove and place on paper towels to drain.
Place cinnamon and sugar into a large plastic bag. when the donuts have cooled slightly, place them in the bag, seal, and shake until thoroughly coated. Serve warm.
