Gnocchi with white beans and sun dried tomatoes.
Heat 1 tablespoon of sun-dried tomato oil and 1 tablespoon olive oil in a large skillet. Add gnocchi and cook stirring often until plumped and starting to brown - 5 to 7 minutes.
Add beans and spinach - cook until the spinach is wilted - about 2 minutes. Transfer to a bowl.
In the same skillet, heat 1 tablespoon oil from tomato jar and 1 tablespoon olive oil. Add sun-dried tomatoes and shallot. Cook, stirring frequently, for about 2 minutes - until shallot starts to soften.
Add chicken broth. Cook until liquid is reduced - about 3 to 4 minutes.
Reduce heat and add heavy cream and lemon juice, plus salt and pepper to taste. Stir to combine well.
Return gnocchi mixture to the skillet. Stir to coat.
Serve topped with basil.
