1. Blend together ricotta, sugar and cinnamon in a small bowl.
2. Take 1 sheet of graham cracker and break it in half to form 2
squares.
3. Spread ricotta mixture over one side of cracker and top with
other cracker half. Wrap in plastic wrap and freeze. Yields 1 per
serving.
