These delicious muffins get their flavor from Good Earth Tea
Preheat oven to 400 degrees F. Stir together the flour, baking powder, salt, and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork until moistened, but do not beat. Then add milk and vegetable oil, and then pour the contents of the small bowl into the big bowl and mix. The batter will be lumpy. Add food coloring to change the greenish tinge of the batter into a pale pumpkin orange. Pour the batter into paper lined muffin pan cups. Bake for 25 minutes, or until golden, and let cool. While the cupcakes are cooling, make the frosting by beating the cream cheese and 1/4 butter with an electric mixer in a bowl until smooth. Beat in the confectioners' sugar a little at a time until incorporated. Add the vanilla extract and 1 teaspoon ground cinnamon; beat until fluffy. Once the cupcakes are cool, frost them with the cream cheese icing.
