Preheat oven to 350 degrees F. Spray 8X8 with non-stick spray. In large bowl, sir together oats, flour, brown sugar, add-ins, wheat germ, salt, cnnamon, and nuts. In a asmaller bowl mix applesauce, honey, egg and vanilla; pour into the flour mixture, and mix well by hand. Press 1/2 mixture into pan, bake at 350 for 12 minutes. Pour 1 cup Preserves mixed with 1/2 cup spinach puree over top of baked crust. Layer remaining granola mixture over the top and bake for 20 minutes until evenly browned.
