Pork green chili with a nice flavor due to the roasted big jim chili peppers. Make it as hot as you like by using hot roasted chilies or more jalapenos.
In a large plastic bag add pork, flour, salt & pepper. Shake to evenly coat pork.
In a large skillet heat oil over high heat. When oil is hot add the dredged pork and all the extra dredge into the skillet.
Brown the pork stirring often until browned on all sides. When done add entire contents of skillet to a large Dutch oven or kettle.
Add the rest of the ingredients to the Dutch oven and simmer on low (200 - 225F) for 4 - 5 hours.
Recipe makes 14 cups (3 1/2 quarts).
** Can substitute 4 cups of roasted, diced chilies and their juice for the 40 oz. jar of Hatch Green Chilies. 4 cups equals about 32 roasted big jim chilies.
