Preheat the grill broiler to its highest temperature and line a small baking tray with tin foil.
SPICE UP YOUR CHICKEN
Peel and finely grate 4 cloves of garlic and 20g of ginger in to large mixing bowl. Add in 4 tsp smoked paprika and 4 tsp ground cumin along with 2 tsp of oil and a generous pinch of salt and grind of black pepper. Tip in the chicken and mix well to evenly coat the chicken in the spices.
GRILL THE BIRD
Lay the coated thighs on the lined tray ensuring they are spaced out well, wash your hands, then pop the chicken under the grill. Cook for 5-6 minutes on each side, until charred in places and cooked throughout. Get on with the rest of the dish in the next steps while you wait.
PREP YOUR SLAW
Finely slice 10 spring onions and coarsely shred 4 gem lettuces and tip in to a large mixing bowl.
MAKE YOUR DRESSING
Chop 20g of coriander and 20g of mint and add it to the mixing bowl along with 200g of yoghurt, 4 tbsp of sriracha and 60g roasted peanuts. We will mix it all together just before serving.
CHAR YOUR BREAD
Cut the ciabatta in half and open it out like a book. Once the chicken is cooked, remove it from the grill and then grill your bread for 2-3 minutes until golden brown all over.
CHEESE IT UP
Remove the ciabatta from the grill and top with the grilled chicken. Evenly grate over 60g of cheddar and then return the topped bread to the grill for 1-2 minutes until the cheese has melted.
PORTION IT UP
Remove the bread from the grill and top the sandwich with the remaining leaves of coriander and mint, close it up and cut it in half.
SERVE
Mix the slaw thoroughly, taste and adjust the seasoning and divide between plates along with the chicken sandwich halves.
