1. Preheat a grill to high. Pat fish dry and season with most of salt, and black pepper.
2. Let fish rest while grill heats.
3. Place onion, garlic, cilantro, parsley, jalapeno, and remaining salt in a food processor; process until smooth.
4. Add lemon juice and 4 tablespoons olive oil; pulse until combined.
5. When grill is hot, brush fillets with remaining tablespoon olive oil.
6. Grill, skin side down, uncovered for 1 minute.
7. Turn off burner under fillets, leaving the opposite side on high. Do not flip.
8. Grill covered, until cooked through, 3 - 5 minutes.
9. Using a fish spatula, transfer fillets to a platter. Serve with chimichurri.
