Combine the lime zest and juice, chiles and basil in a blender and blend until smooth, then emulsify with the oil. Pour over the fish, turn to coat and marinate for 10 minutes.
Grill the fish and slice 1/2 inch thick. Transfer to a platter and serve immediately.
Serve with Fresh Lemonade with Tequila and Mint Sprigs (see recipe)
