Make the lemon sauce: remove the zest from the unsqueezed lemon, and mince the zest fine. Stir together the lemon zest, lemon juice, vinegar, olive oil, shallots, and parsley in a small bowl. Season with salt and pepper. Let the sauce stand for at least 30 minutes and up to 2 hours before serving.
Cut the unsqueezed lemon into very thin slices, and place the slices in the cavity of each trout. Season the trout, inside and out, with salt and pepper. Grill the fish, turning it once, about 4 inches above the heat for 7 to 10 minutes on each side, depending on the size of the trout. When the trout is done, its flesh will pull away from the central bone but still offer some resistance. Do not overcook.
Transfer the trout to a serving platter, spoon the sauce over it, and serve immediately.
