Leftover ham for a savoury snack
Place flour, egg, milk, salt and pepper in a bowl, mix to combine
Add basil, ham, peas, ricotta. Mix to combine
Heat large non- stick pan over medium heat and brush with oil.
Cook 2 tbs of batter per fritter for 2-3 min each side, until golden and cooked through.
Brush pan with oil between batches.
Top the fritters with extra basil leaves and serve with tomato relish.
