A make ahead, healthy, breakfast bowl.
Preheat oven to 350.
Place the milk and the whole eggs in a large bowl and mix. Add the egg whites and mix.
Spray a large casserole dish with non-stick spray. Add the egg mixture and place in the oven for 10 minutes.
While the eggs are cooking, carmelize the onion. Add the peppers and continue stirring until softened. Add the balsamic vinegar.
After the eggs have cooked for 10 minutes, remove from the oven and sprinkle the onions and peppers on top.
Cook for another 20 minutes or until the eggs are firm.
Remove from the oven, add the cheese to the top and let cool.
Put 1/8 of the egg mixture and 1/8 of the sweet potatoes in 8 freeze bowls and freeze.
Watch the eggs and try not to over cook them.
