1.Roast pecans over medium heat for 3-4minutes, tossing until just toasted. Set Aside
2. Place eggs, 2 bananas, vanilla extract and cinnamon into a blender and whizz for 1-2 minutes until consistency is smooth and thick.
3. Pour mixture into a shallow dish. Place 2 slices of bread into mixture, gently press the bread into the liquid allowing it to soak up the mixture. Turn slices over and repeat.
4. Mean while heat half olive oil in a large non stick frying plan over medium heat. Place soaked bread into frying pan. Cook 2-3 mins on each side, remove from pan. Repeat for remaining slices.
5. Serve banana bread immediately . Sprinkle with pecans and two chopped bananas on top.
