Sometimes I just want something simple and mushrooms on toast does the trick for any meal of the day.
Cover the dried porcini mushrooms with boiled water to rehydrate, let soak. Heat a pan to medium heat and add a dash of olive oil. Add all the mushrooms to the pan and sauté until cooked, a few minutes. Add the parsley, chives and butter to the pan and mix.
Load up the toast with bean guac, rocket and mushroom medley.
