These sausages are easy to make, incredibly delicious and do not contain any pork.
Remove the bones from the chicken thighs and cut the meat and skin into 2 inch strips.
Combine the chicken, peppers, basil, salt and pepper and run the mix through a meat grinder.
Place the ground meat mix into the freezer for 15 minutes to chill.
Fry a tablespoon of the meat mixture in a skillet and taste. Adjust the seasoning in the batch of sausage if needed.
Stuff the sausage into beef collagen casings and tie the links off with twine.
Grill the sausages with indirect heat (or bake in a 300F oven) for about 20 minutes until an internal temperature of 165 is reached.
