01. Peel and halve garlic cloves. Add oil, ginger, cinnamon stick, and garlic to a small pot and heat over medium heat. The oil should never boil but always be close to simmering. It should simmer for approx. 30 mins. Afterwards, remove from heat and let cool.
02. Add chili flakes and salt to a heat proof bowl. Pour remove spices and pour oil in. Combine. Fill and store in an airtight jar.
