Suggest a better description- In a crock pot mix together ONE can of enchilada sauce, chili powder, garlic, and salt.
- Add chicken and toss in sauce.
- Cook on low for 3-5 hours until chicken is tender and can be shredded.
- Preheat oven to 350 degrees when chicken is cooked. Spray pan (9x13) with cooking spray.
- Shred chicken with a fork in the crock pot with sauce.
- Mix honey and lime juice with shredded chicken and stir to combine.
- Add 1 cup of the cheese, sour cream and cilantro. MIx to combine.
- Place about 1/2 cup (or so) of chicken mixture along the middle of each tortilla. - - Roll up and place seam sides down in baking dish. Cover with the second can of enchilada sauce and top with remaining cheese.
- Bake for 30 minutes or until the cheese is bubbly and melted.
- Garnish with extra cilantro and sour cream.
