1. Marinate chicken in 2 cups of red wine and bay leaves for 1 hour.
2. In separate bowls, add preserves, honey and soy sauce, whisk to combine.
3. Heat olive oil in a dutch oven and brown chicken on both sides.
4. Reduce heat to medium-low, then add garlic. Stir for a couple of minutes.
5. Add remaining cup of red wine, chopped plums and the honey-plum-soy mixture.
6. Bring to a boil then reduce heat to a simmer. Cover and cook for 2 hours.
7. Spoon chicken over noodles.
8. Garnish with green onions and serve.
