Suggest a better descriptionIn a mixing bowl, add 2 T of fat along with turmeric, cumin, cayenne, cardamom, and salt. Mix into a paste. Add lamb and toss to coat.
Heat 1 T of fat in large, heavy bottomed pan or dutch oven over medium-high heat. Add 1/3 of the lamb and brown well. Remove to plate and repeat with remaining lamb.
Add in onions and carrots and cook for 5 minutes, stirring to remove the brown bits from the bottom of the pan. Stir in garlic and ginger and cook another 5 more minutes.
Return lamb to the pot and stir in the lemon zest and chicken stock. Bring to a boil, then reduce heat to low, cover and simmer (or braise in oven at 300 degrees) for 1.5 to 2 hours, stirring occasionally, until the lamb is tender.
Add dried plumbs in last 30 minutes of cooking. Salt & pepper to taste.
