Cut chicken into thin strips
Heat oil and add chicken to a wok
Brown over a moderate heat
Remove chicken and set aside
Add the spring onion, garlic, ginger to the pan
Cook for one minute
Add sauce mix, chilli sauce, lemon, water and noodle flavour sachets
Bring to the boil, stirring constantly
Simmer for 5 minutes or unil chicken is hot
Break noodles and add to pan
Simmer for two minutes
Stir in cashews and serve immediately
