MARINATE FOR 8 HOURS!!!
1. In shallow bowl or pie plate, stir together coriander, turmeric, ginger, cumin, salt and pepper. In another shallow bowl, beat egg whites with 1 tablespoon of water. Place coconut on plate or sheet of waxed paper. Dip chicken first in egg mixture, then in curry mixture, and then in coconut. Place on place and refrigerate, uncovered, at least 1 hour or up to 8 hours for coating to set.
2. Preheat oven to 400°F. Place chicken on lightly greased jelly-roll pan. Drizzle oil over chicken. Bake 30 minutes, turning chicken over midway, until chicken is cooked through and coating is crisp.
