Great meatloaf, and potatoes and easy+great
Clean & halve potatoes, then place them in Instant Pot
Pour beef broth over potatoes
Add fresh garlic cloves (halved)
Place metal rack over potatoes
Mix meats and next 6 ingredients in large bowl
Lay out a sheet of aluminum foil and spray center with Pam
Place the meat mixture on the foil as a loaf, and then place the package on the rack in the Instant Pot
Select High Pressure for 25 minutes on the Instant Pot
Mix the topping sauce, combining ketchup, brown sugar, Worcestershire sauce and mustard
Preheat oven to Broil
Allow Natural Release for 10 minutes and then Quick Release
Lift meatloaf in foil from Instant Pot to a cookie sheet or oven pan
Brown the meatloaf under the broiler for about 5 minutes, until the top is firm
Remove meatloaf and cover with the topping sauce, then broil another 2 minutes to caramelize the topping
Meanwhile, mash the potatoes and garlic in the pot, adding the butter and sour cream to create a smooth texture
OPTIONAL: Brown Gravy is a great addition. Use the package mix made with milk (instead of water) + some sliced mushrooms
