Great instapot curry for a busy night
Rinse Lentils
Set instapot to Sauté.
Cook shallot, garlic, ginger, and chicken until starting to brown.
Add spices and cook 1 min
Add broth, coconut milk, zucchini, and lentils to pot. mix well.
Set pressure to High and cook 15 min. When done let it pressure down by itself for 10 min.
Stir in the lemon juice and serve with cilantro.
