No, it's not what they eat in Amarillo. This sauce skips the bourbon, sugar, molasses, and store-bought ketchup of the recipes we love and grew up with. It's a salute to vegetables and fruit instead, with an Asian infusion and a whole lot of heat. I'm sure you'll love it if you're from Amarillo. And you'll love it even if your town happens not to have its own hit song.
Prepare all vegetables in advance according to instructions above.
In a large bowl, combine the following and let sit for 20 minutes or longer: tomato sauce, tomato paste, lemon juice, apple cider vinegar, 1 cup water, kosher salt, tabasco, mustard, hoisin sauce, worcestershire sauce, apricot jam.
In a large pot, heat the oil. Add garlic, bell pepper, onion, and black pepper. Cook, stirring occasionally, for about 10 minutes.
Add oregano, cumin, chili powder, cloves, then immediately add the bowl of tomato mixture prepared in advance.
Then add the jalapeno and apple. Bring to a boil. Reduce heat and simmer for 45 minutes.
30 minutes into the simmer add 1/2 cup vinegar and 1/2 cup water. Continue to stir occasionally.
Makes at least 16 cups. Keep refrigerated.
