Divide dough into 4 equal parts; roll each into 8-inch circles. Cover and set aside.
In bowl, whisk together oil, garlic and jalapeno pepper. Add red pepper and onion; toss to coat.
Spread sauce over half of each pizza base; sprinkle with pepper mixture and mozzarella cheese. Top with sausage. Brush edge of doughwith egg whites. Fold dough over filling ti form half moon shapes; pinch edges to seal.
Pour enough oil into deep fryer or deep heavy bottomed saucepan to come at least 2 inches up side. Heat to 375'F or until 1 inch cube of bread turns golden in 30 seconds. Gently place 1-2 panzerotti into oil; deep fry, turning once, until golden brown and crisp, about 5 minutes. Drain on paper towel. repeat with remaining panzerotti.
