Raspberry avalanche cake with chocolate
• Preheat oven to 350
• Coat 9x9 baking dish with non-stick spray
• In large bowl, combine flour, ½ sugar, ¼ cup cocoa powder, baking powder, baking soda, and salt
• In medium bowl, combine 1 cup yogurt, oil, and vanilla extract
• In small bowl, beat egg white until soft peaks form
• Gradually beat in remaining ½ cup sugar until stiff peaks form
• Stir yogurt mixture into flour mixture just until moist
• Fold in egg whites
• Pour into dish
• Sprinkle on raspberries
• Bake for 40 minutes
• In medium bowl, mix ½ cup yogurt and preserves to drizzle on cake when done
